The Best Braised Short Ribs

Dan and I made braised short ribs for dinner on Valentine’s Day – our first time making them  – and they were phenomenal. In fact, Dan might have declared it one of the best meals he’s ever had. All the better I’m sure because we typically stick to vegetarian dishes or fish when when we cook at home, plus we used high quality ingredients. We got the goods at Eataly on Thursday evening, prepped the short ribs and threw them in the crock pot before work on Friday morning and had an amazing dinner that night…perfect! So, without further adieu, the recipe (so, so easy):

Recipe from Joyful Healthy Eats:

  • 2-3 lbs. of bone-in beef short ribs
  • 1 tablespoon of olive oil
  • 15 oz. can of tomato sauce
  • ½ cup of balsamic vinegar
  • 4 whole dried dates
  • 6 garlic cloves, smashed
Spice Rub:
  • 2 tablespoons  sea salt
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried sage
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  1. In a small bowl, mix together the spiced for the rub – if you don’t have al the spices, just put together a combo of similar spices you have on-hand
  2. Pat dry bone-in beef short ribs and rub the spice blend into both sides of the short ribs
  3. Heat a large skillet to medium high heat, add olive oil to pan and sear the short ribs for 2-3 minutes per side (until slightly browned)
  4. Put the short ribs in a slow cooker with the tomato sauce, balsamic vinegar, whole dried dates, and smashed garlic cloves.
  5. Cook for 4-6 hours on low (we put the crockpot on a timer while we were at work so it was ready when we got home)

I am telling you – they are ridiculously good and so easy. We ate them with a side roasted carrots and some red potatoes, but they would also be yummy with a cheesy polenta. You can’t go wrong! Here are a few pretty amateur pictures I took mid-meal (and that Villa Cafaggio Chianti was great too).


Not the prettiest dish, but who cares when it’s this good, right?
