Roasted Acorn Squash for Fall
Did you eat squash growing up? I’ve had butternut squash, but when Dan brought home a whole acorn squash I wasn’t quite sure what to do with it. Until I saw this beautiful dish on Pinterest via Edible Perspective. It just looked so good and, quite importantly, relatively simple. I already had a lot of the ingredients – and chances are you do too. I won’t repost the whole recipe here, but rather I’ll just share the adaptations I made and tell you that it both smelled and tasted like fall and was completely delicious!
Recipe here! Since it was just Dan and me, we used one squash rather than two, and instead of baking apples I topped it with pomegranate seeds. Also, I didn’t have pure maple syrup, and let me tell you, regular syrup that we use on pancakes did the trick juuuuust fine.
